Macro Balanced Salad

This is a lunch time go to for me. It is large, filling and I know it has all the right stuff without having to put too much thought into it. Protein can be changed out depending on your preferences. Give it a go and let me know if you can’t finish it.

Ingredients

40g mixed green salad leaves (not iceberg!)
20g baby spinach or rocket/arugula
1/8 carrot - peeled into fine strips with a vegetable peeler
9 g walnuts - crushed or chopped
35g sheep feta - broken up
45g cherry tomato - chopped
1/4 zucchini - 25g peeled into fine strips
1 x 95g tinned tuna in springwater
9g pitted kalmata olives - chopped
2 slices rye crisp bread (Ryvita)

Dressing -
1 1/2 tsp white wine vinegar or balsamic
1/2 tsp dijon mustard
1/4 tsp raw honey

Directions

  1. Prepare salad vegetables and dressing separately. Drain and add tuna to salad, dress with approx. 1 tbsp of dressing.
