Quinoa + Apple Porridge

 

Perfect for a leisurely breakfast this Sunday. This is full of amazing flavour, gut friendly, but will leave you feeling satisfied instead of an upset tummy or guilt over a big fried breakfast.

Serves 1 - 30 mins

Ingredients

1/2 cup quinoa - rinse and soak for 5-10mins
500ml water
1 apple - tart or cooking apples like Granny Smith are best
1 tsp cinnamon
1 tsp raw honey - drizzle only
1 tsp sunflower seeds

Directions

  1. Peel and chop apple into 1-2 cm squares or bite size.

  2. After soaking, drain the quinoa and add fresh water, apple and cinnamon to the saucepan. Bring to the boil, cover and reduce to simmer for approx. 20 mins.

  3. Remove from heat when cooked. The apples and quinoa should be soft and the water completely absorbed. Add extra cinnamon to taste.

  4. Place in a bowl and drizzle with a little honey, add milk of your choice and sprinkle of sunflower seeds.

* A half serve of this would make a yummy dessert with some added blueberries.
